BUG Farms CSA Week 9 (A) Newsletter

Hi BUG Farmish Friends,

So this week, the guys are taking care of the farm without me- I am off in Idaho for the King Mountain Hangliding Competition that I am a part of every year as a chase driver for my good friend Lisa who is an amazing cross country hanglider pilot. So, that's why I am writing this email so late, I didn't have internet access until this morning, just as the guys are delivering your shares. From what I hear there is a lot of good stuff coming for all of you this week, including new additions of summer squash- either Black Beauty or Golden Zucchini-yay! We also harvested some very tender and tasty baby Red Russian Kale, one of our attempts as a mid summer baby green : )

In eggish news, I am planning on starting the Egg CSA Share next week, week 10! I will be contacting those of you who showed interest in the egg share about details, but it looks like pricing for full shares (one dozen eggs per week) will be $90, and half shares will be $50( 1 dozen every other week, or if you have a full veggie share you have an option of getting 1/2 dozen every week). If you are interested in eggs but haven't let me know yet just send me an email with the type of share you would like. Anyway, lets move on to share details and recipes!

CSA Week 9 (A) Share Includes:

  • Zucchini- Golden and/or Black Beauty
  • 1 bunch Carrots
  • 1 bag radish microgreens
  • 1 bag baby Red Russian Kale
  • 1 bag Brassica Mix with extra Arugula
  • 1 bunch Radishes- French Breakfast and/or Lady Slipper
  • 1 bunch Green and/or Purplette Onions
  • 1 bunch Mustard Greens or Kale

Grain Share: Corn Flour

I always love cornbread with corn flour, but you can also experiment with some Pan Fried Corn Fritters with some of the greens, carrots, zucchini, and green onions mixed in, here is a basic recipe that you can use and tweak

Veggie Corn Fritters

1 c Corn Flour

1 tsp Baking Powder

1 tsp Salt to taste

1/2 tsp Turmeric

1 Egg

1/2 - 1 c Milk/Yogurt/Kefir

1/2 c chopped greens-kale, chard, mustard, etc

1/4 c chopped green or purplette onions

1/4 cup minced carrot

1/4 cup shredded zucchini

Enough Oil or Ghee for the pan

Mix Dry ingredients in bowl. Combine wet ingredients in separate bowl then add veggies, and then mix in dry ingredients. Spoon Batter onton hot skillet with oil and fry until cooked and browned. Serve with a lovely salad and maybe an herbed yogurt sauce.

Recipe!

Grated Zucchini and Carrot Salad with Cherries and Seeds!

3 carrots, grated

3 zucchini, grated lengthwise into long ribbons

1 handful radish Microgreens

1/4 c halved and pitted cherries

1/4 cup pumpkin seeds, toasted

2 Tbsp Sunflower Seeds

1 Tbsp Chia Seeds

1  lime, juiced

1 teaspoon salt

1 tablespoon olive oil

1 Tbsp Nutritional Yeast

Mix the carrots, zucchini, Cherries and seeds together. Whisk the lemon juice, salt and olive oil together. Toss the dressing with the salad, then top with microgreens and serve. You could also serve this on top of a bed of the tender and tasty baby Red Russian Kale. Why not have this alongside your Corn Veggie Fritters : )
