Easy Easy Golden Beet Salad with Basil & Lemon



1. Roast or Steam your beets (I prefer steaming as it doesn't heat our kitchen up so much and it maintains the golden beet color if you leave the skin on; they are very easy to peel after steaming). 

2. Rinse and peel your steamed beets in cool water

3. Slice or chop your beets in whatever way you prefer and throw in a bowl

4. Add a couple TBSPs of fresh lemon juice over the top

5. Drizze with olive oil

6. Season with salt, pepper and red pepper flakes

7. garnish with fresh torn or chopped basil (we use about 1/4 cup of greens or herbs mixed in) and fetta or goat cheese (and anything else you love! dill? onions? chives? go for it!

8. Done!
