All About Curly Endive (aka Frisée)
curly endive - -This bright and frizzy green is a part of the daisy or chicory family, and is widely used in France. The inner core is the most tender and delicious of the whole head. The dark green tips of the head can be more bitter, and are often used as a soup garnish as opposed to being eaten raw. You can trip the top inch or so off of the head, for a more mild endive experience. We hope you come to love this bitter flavor and the way it complements so many other foods.
Fresh & raw, it does have a lovely bitter flavor. Curly endive makes a delicious salad; you can go endive all the way! or mix it with other salad greens, and its flavor goes great with citrus or creamy dressings, and any sharp, tart, or sweet flavors. We've grown to love eating this green with a creamy bleu cheese dressing, roasted beets, and a hard-boiled egg on the side.
